Mozzarella Stuffed Cherry Tomatoes

Looking for a light hors d'oeuvres recipe that will also impress with presentation?  I made these adorable Mozzarella Stuffed Cherry Tomatoes while having friends over for pre-dinner drinks recently and they were delicious!

There are some nice recipes online for this, but I didn't really follow any of them.  I kind of made it up along the way, here is my take on it:

Pre-dinner Cocktails and snacks: Mozzarella Stuffed Cherry Tomatos and Roasted Chickpeas



Ingredients:

24 cherry tomatoes
1/4 lb fresh mozzarella, cut up into 1/4" cubes
Fresh Basil
Olive Oil
Balsamic Vinegar
Herbs (whatever you have on hand, but rosemary works well)
Red Pepper flakes
Salt
Pepper


A few hours before serving, begin marinating the cubed mozzarella in a mixture of olive oil, some herbs, and red pepper flakes.

Prep the cherry tomatoes.  Cut a very thin sliver off the bottom of the tomato so that you have a flat base that prevents the tomato from rolling around.  Be careful not to cut too much off, the more of the tomato you preserve, the more you will have to stuff with cheese.

Cut the top ~1/8" off the tomato.  Scoop out all the seeds and juice using a 1/8 teaspoon.

Drain the mozzarella from the marinade.  Gently scoop the tiny mozzarella cubes into the cherry tomatoes.

Sprinkle lightly with salt and pepper to taste.

Top each stuffed tomato with a small basil leaf.

Using an eye dropper, add a drop of balsamic vinegar over each tomato.

Drizzle lightly with olive oil.
