Cooking: Roasted Pumpkin Seeds

After you carve your pumpkin, you can reward yourself not only with an awesome looking pumpkin, but also pumpkin seeds!

It's super easy and you only need a few ingredients to make these yummy crispy seeds:

Olive Oil
Salt
Garlic powder and/or your choice of seasonings

Preheat your oven to 400 degrees.

After scooping all the seeds out of your pumpkin, rinse them.

In a small saucepan, add 3-4 cups of water, the seeds, and 2 TB of salt.


Cover and bring to a boil.  Then turn the heat down and simmer for 10 minutes.  This step really helps get any leftover slimy gunk off!

Drain the seeds (don't rinse!).

Cover a baking sheet with aluminum foil.  Spread the seeds out in one layer.

Drizzle 1 TB of olive oil over the seeds.  Sprinkle the seeds with seasonings of your choice (I love using garlic powder and a blend of Cajun seasoning that Piggy KK picked up for me in New Orleans!).


Mix it all together with your hands, and then spread the seeds back in one layer again.


Bake on the top rack of the oven for 20 minutes or until the seeds are browned to your liking.
